Ok, mea culpa....
I was browsing through my router settings again.....
And I had every single port set but I missed out that above all these single port configurations there was a higher priority one which directed all the traffic from 5000 to 5100 to one single port (5055), Hence it did not work.
I feel stupid now...
Anyway, thanks for your help. I'm happy that I've sorted it out.
Still, wonder about my two questions above :)

As you can see from the logs, your device is clearly still sending data to the wrong port.
--> what do you mean? How do you know? You mean the 5038 or?
--> also, how did you determine know it needs to be port 5002?
