I have Traccar setup and it is working well. I am able to view a map of where I was for a certain time period.
My question is can I save this so I can run them again? For example I can pull up a map of say Jul1 - Jul 5 and this shows my location on a map for when I was in France on vacation. I would like to save this somehow so I could push “2019 France” and it would show me the map of where I went in France. The same for all other vacations going forwards. I don’t want to have to remember exact dates for each trip to see it.

I don't think that's possible. You could always store a text file on your computer that would say something along the lines "2019 France: Jul 1 - Jul 5"...
try to export the trip to gpx file , and then save it on the server as POI Layer
