Notifications based on Last Update
There is no such option, but unknown status can be used to achieve something similar. You can disable "offline" state and set timeout to 7 days.

How can I send a notification based on the Last Update column? I have looked in the Notifications and Computed Attributes options and can't find a way to implement it.
Example: Send a check device notification if "Last Update" reaches "7 days"
