Is there a way to set the "$webUrl" variable?
In all email templates it is used but instead of getting the FQDN of the server it uses the IP which is not ok if you use a VM with an internal IP address not accessible from the public.
I can change it manually but before that I would like to know if I can set it up somewhere else.

Yes, you can set "web.url" parameter in your config.
In the documentation I couldn't find any "web.url" key....

It can be used if you are on version 3.10. Not sure about earlier versions.
